Banana Bread: The Best

banana breadBanana Bread? Really? The Internet is full of banana bread recipes…can’t this 3rd post be about something more exciting than good old banana bread? Well, there are 2 good reasons: For one, I have a couple of old bananas lying around in the kitchen dying (literally!), and secondly, this really is the best banana bread recipe I have ever made. A few years ago I was looking for a recipe on the Epicurious website, and all the reviews referred to a certain recipe that a reviewer had posted and everyone was raving about how it was the best banana bread they ever had! Unfortunatly, I can’t give the credit to its creator, I just don’t have the information. But it`s amazing…. so yes, I think we deserve THIS banana bread recipe!!!  There are few ingredients and it’s fast to make. Yum.

Ingredients
  • ½ cup of sugar (I like it not too sweet but you can go up to 1 cup if you prefer a sweeter bread)
  • ½ cup of butter room temperature
  • 3 over-ripe bananas, puree-d
  • 2 eggs beaten
  • 1¼ cups of flour
  • ½ tsp of salt
  • 1 tsp of baking soda
Instructions
  1. Preheat your oven to 350⁰F.
  2. Cream sugar and butter in a medium bowl using an electric mixer. You can also do it by hand with a fork, you will have great results too.
  3. Add the bananas and eggs to the butter/sugar mixture.
  4. Mix flour, salt and baking soda together in another bowl. You can sift the mixture if you want, I don’t bother.
  5. Add the flour mixture to the banana mixture
  6. Pour batter in a lightly greased 9x5 loaf pan.
  7. Bake until golden on top and a toothpick inserted into the center comes out clean, about 50-55 minutes.

    When I stumbled upon your banana bread recipe and saw that you are French Canadian, I was curious to read your recipe. I have my grandmother’s Banana Bread recipe from of old, so I compared yours with hers. They are identical minus hers uses 2 c. flour instead of 1 1/4 c. and no salt. I may have to try yours just to see which one I like better! Here I thought I had the best banana bread recipe on the planet!!! Blessings to you!
