Ingredients
  • 125g unsalted butter, chopped
  • ¼ cup maple syrup (you could replace with honey)
  • 1 cup rolled oats
  • ½ cup pumpkin seeds
  • ½ cup sultanas raisins
  • ½ cup dried cranberries
  • ½ cup dired apricots, chopped
  • ½ cup toasted coconut flakes
  • ½ cup non-bleached all purpose flour
  • 1 tsp. baking powder
  • Pinch of salt
Instructions
  1. Preheat oven to 350 F.
  2. In a small saucepan over medium low heat, combine butter and syrup, stir until butter has melted. Set aside.
  3. In a medium, bowl, combine the rolled oats, pumpkin seeds, raisins, cranberries, apricots and coconut flakes.
  4. In a small bowl, mix the flour, baking soda and salt. Pour into the oats mixture and stir until combined.
  5. Pour your syrup mixture into the oats bowl. Mix to combine.
  6. Transfer to a lightly greased 20cm x 30cm tin lined with parchment paper. Use your hands to flatten the mixture into the tin.
  7. Bake for 20-25 minutes or until golden.
  8. Cool completely before cutting into squares.
