Muesli Bars
Author: Adapted from Donna Hay, The New Classic Cookbook
Serves: About 14 squares
- 125g unsalted butter, chopped
- ¼ cup maple syrup (you could replace with honey)
- 1 cup rolled oats
- ½ cup pumpkin seeds
- ½ cup sultanas raisins
- ½ cup dried cranberries
- ½ cup dired apricots, chopped
- ½ cup toasted coconut flakes
- ½ cup non-bleached all purpose flour
- 1 tsp. baking powder
- Pinch of salt
- Preheat oven to 350 F.
- In a small saucepan over medium low heat, combine butter and syrup, stir until butter has melted. Set aside.
- In a medium, bowl, combine the rolled oats, pumpkin seeds, raisins, cranberries, apricots and coconut flakes.
- In a small bowl, mix the flour, baking soda and salt. Pour into the oats mixture and stir until combined.
- Pour your syrup mixture into the oats bowl. Mix to combine.
- Transfer to a lightly greased 20cm x 30cm tin lined with parchment paper. Use your hands to flatten the mixture into the tin.
- Bake for 20-25 minutes or until golden.
- Cool completely before cutting into squares.
