Strawberry Jam with Lemon

This jam will keep for about 2 weeks in the refrigerator.

Serves: 1 cup
Ingredients
  • 1 lb (500 g) strawberries, stemmed and cored
  • ½ cup sugar
  • ½ tsp. lemon zest, grated
  • 1 tsp. lemon juice
Instructions
  1. In a medium heavy saucepan, roughly mash the strawberries with a potato masher (you can leave bigger pieces).
  2. Over medium heat, cook for about 12 minutes (or until reduced to 1 cup), stirring occasionally.
  3. In the meantime, using your fingers, rub the lemon zest with sugar to release the essential oils in the zest.
  4. When reduced to 1 cup, add sugar and lemon peel and cook an additional 6 minutes.
  5. Add the lemon juice and transfer in a jam jar and cover tightly.
