Fattoush Salad with Feta

Ingredients
  • Salad
  • 1 romaine lettuce, trimmed, cut crosswise into ¾" strips
  • 3 medium tomatoes, chopped or 3 cups medium cherry tomatoes, halved
  • 4 Lebanese cucumbers, thinly sliced crosswise
  • ½ cup flat-leaf parsley, chopped
  • ½ cup mint, chopped
  • 3 green onions, thinly sliced
  • ½ cup crumbled feta cheese
  • 2 pitas, brushed with some olive oil and salt, toasted until golden brown, broken into bite-size pieces
  • 1 tbsp. sumac
  • Dressing
  • 3 tablespoons lemon juice
  • 2 tablespoons pomegranate molasses
  • 2 teaspoons white wine vinegar
  • ½ teaspoon dried mint
  • ¾ cup olive oil
  • Kosher salt
Instructions
  1. Dressing
  2. Put all the ingredients in a blender and blend until smooth.
  3. Salad
  4. In a large bowl, combine all the ingredients except pitas.
  5. Add ½ of dressing; toss to coat, adding more dressing by tablespoonfuls as needed.
  6. Add pita and toss.
  7. Sprinkle sumac over.
