In a large bowl, combine the dry ingredients: oats, pumpkin seeds, almonds, toasted coconut flakes, wheat germ, brown flax, brown sugar, cinnamon and salt.
In an another bowl, combine the honey or maple syrup and the oil.
Pour the wet mixture into the dry one. Mix well.
In a small bowl, whip the egg white until frothy. Pour over the granola and mix well.
Scatter it all onto a baking sheet preferably covered with parchment paper.
Bake for about 45 to 55 minutes, until light golden brown.
Let cool and mix in your cherries.
