Ingredients
  • 2 large eggs
  • 1¼ cup unsweetened apple sauce
  • ½ cup granulated sugar
  • ⅓ cup coconut oil, melted
  • ¼ cup buttermilk
  • 1 tsp vanilla
  • 1¼ cups whole wheat flour
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup old fashion oats
  • 1 cup frozen raspberries
Instructions
  1. Preheat oven to 350°F
  2. Butter 9-by-5-inch loaf pan and dust with flour. Tap out excess.
  3. In a medium bowl, whisk together the eggs, applesauce, sugar, oil, buttermilk and vanilla until well blended.
  4. In a large bowl, whisk together the flour, baking powder, baking soda and salt. Stir in the oats.
  5. Add wet ingredients to the dry, stir just until evenly combined. Stir in raspberries.
  6. Spread in loaf pan.
  7. Bake 60 minutes, or until cake tester inserted in centre comes out clean.
  8. Let cool in pan on rack for 15 minutes. Turn out onto rack; let cool completely.clean.
