For me, there is no better way to kick start your day than a big bowl of fruit, yogurt and this Homemade Cherry Granola on top. Making your own granola is super easy and fun. I’m always amused by the reactions I get when people realize that I make my own granola! They look at me like I’m some kind of alien that has too much time on its hands (which, like everybody else I don’t!). But there are a few good reasons why I prefer to make my own: first of all, it’s fast and very easy to do, second it tastes a lot better than the commercial stuff and perhaps most importantly, you control the amount of fat, sugar and salt in the final product. It keeps for at least 3 weeks in an airtight container so you can make a good sized batch. What is also great making your own granola is that you can easily adjust the recipe to meet your  exact preferences. Like in this recipe for instance, you could replace the cherries with another dried fruit and the almonds with another kind of nut. So come on, give it a try! You won’t be sorry, I promise.

Serves: About 6 cups
Ingredients
  • 3 cup rolled oats
  • ½ cup pumpkin seeds
  • ½ cup slivered almonds
  • ½ cup toasted coconut flakes
  • ¼ cup wheat germ
  • 3 tbsp. brown flax (optional)
  • 3 tbsp. light brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp salt
  • ⅓ cup honey or maple syrup
  • 2 tbsp coconut or olive oil
  • 1 egg white
  • ½ cup dried cherries
Instructions
  1. Preheat your oven to 300⁰F.
  2. In a large bowl, combine the dry ingredients: oats, pumpkin seeds, almonds, toasted coconut flakes, wheat germ, brown flax, brown sugar, cinnamon and salt.
  3. In an another bowl, combine the honey or maple syrup and the oil.
  4. Pour the wet mixture into the dry one. Mix well.
  5. In a small bowl, whip the egg white until frothy. Pour over the granola and mix well.
  6. Scatter it all onto a baking sheet preferably covered with parchment paper.
  7. Bake for about 45 to 55 minutes, until light golden brown.
  8. Let cool and mix in your cherries.
