Quick Pomodoro Sauce

Quick-Pomodoro-SauceI’m always impressed with the fact that with Italian food, more often than not, less is more! This is especially true with this Quick Pomodoro Sauce. It has just 5 ingredients and lacks nothing in flavor. A great tomato sauce should be easy as it has so few ingredients, but balancing them together is really difficult. It also helps to use GREAT tomatoes, like San Marzano canned tomatoes. They are more expensive but worth every penny. San Marzano tomatoes are sweeter, have more flesh and fewer seeds than roma tomatoes. Look for the DOP mention on the label. As a mater of fact, they are so good that, in Italy, they are the only tomatoes that can be used for the best pizza in the world, the true Neapolitan Pizza.

This sauce freezes well so it’s easy to make a double or triple batch. It goes well with any kind of pasta but especially with my Ricotta Gnudi.

Serves: 3 cups
Ingredients
  • 1 28-ounce can San Marzano tomatoes
  • ¼ cup olive oil
  • 2 garlic cloves, chopped
  • ¼ tsp. sugar
  • Kosher salt
Instructions
  1. Pour tomatoes in a blender and pulse for a few second to form a coarse purée.
  2. Heat oil in a medium saucepan over medium-high heat.
  3. Add garlic and cook for about 2 minutes, stirring often so it won't brown.
  4. Add tomatoes and sugar and simmer over low heat for about 10-15 minutes or until slightly thicker.

    Just back from a 8 hours drive from Philadelphia to Montreal…nothing in the fridge…but with a can of good tomatoes, olive oil, garlic and a good recipe, it´s soooo nice to be home. Merci Valo pour la simple recette mais tellement bon!

    If you want to double the recipe, donyou put 1/2 cup of olive oil?
