Rhubard Strawberry Cobbler with Caramel Sauce

This Rhubarb Strawberry Cobbler is a classic. The strong tart taste of rhubarb is mellowed here with juicy strawberries and a creamy caramel sauce.

This Rhubard Strawberry Cobbler is very special to me as it  reminds me of my childhood growing up in Quebec City. My mother used to make it every summer with fresh rhubarb from our garden and it was my favorite dessert. She never really made a lot of desserts (let’s just say that cooking wasn’t her favorite thing, unlike my father and me!) but this one was a tradition that was hers. It was a keeper then and it still is. Rhubarb and strawberries are a great combination of flavors. I just love the strong tart taste of rhubard, mellowed  here with big juicy strawberries and a creamy caramel sauce. A true classic.

Choose rhubarb with deep red stalks as they are sweeter and richer than greener stalks which are more sour. Remember: the stalks are the only part that can be eaten: you have to remove the leaves because they contain oxalic acid and can be toxic.

Serves: 6-8 portions
Ingredients
  • Fruit Base
  • 3 cups rhubarb, sliced (1/2 inch)
  • 3 cups strawberries, hulled and sliced (1/2 inch)
  • Dough
  • 1 tbsp. butter, room temperature
  • 2 eggs
  • 1 cup flour
  • 1 cup sugar
  • 1 tsp. baking powder
  • 1 tsp. vanilla
  • Sauce
  • ¼ cup butter
  • 1 cup brown sugar
  • ¼ cup whole milk or half-half or heavy cream
Instructions
  1. Position a rack in middle of oven and preheat to 400°F.
  2. Fruit Base
  3. Transfer rhubarb and strawberries to a 2-quart baking dish about 2" deep. Spread evenly. Set aside.
  4. Dough
  5. Cream butter, eggs and sugar in a medium bowl using an electric mixer.
  6. Add flour, baking powder and vanilla, beat until well combined.
  7. Spoon big dollops of dough over fruits. You want to see some fruit, you don't need to cover it all (see picture above).
  8. Cook in the oven for 45 minutes.
  9. Sauce
  10. In a medium saucepan, put the butter, brown sugar and milk or cream. Whisk gently until well combined and sugar is melted. DO NOT BOIL.
  11. Divide cobbler in serving bowls, add a little bit of sauce to taste. Delicious with ice cream too!
