In this back-to-school season, I’m really into quick and easy dinners and this Sausage with Balsamic Onions and Grapes recipe is a perfect weeknight solution. The combination of sausages and grapes is a bit unusual for North Americans but it’s a classic in the Italian tradition and the use of caramelized onions and balsamic vinegar here makes it just plain delicious.  I discovered this recipe a few years ago and since then it has become a regular on my weekly dinners rotation because it has all the qualities I look for in a weeknight recipe: quick & easy, preparation in under 15 minutes and few ingredients (only 6!).

I like to serve this over mashed potatoes, like an Italian version of Bangers and Mash! Even more special, add some parmesan to your potatoes: the combination of flavours is divine. Comfort food at its best!

Serves: 4 portions
Ingredients
  • 3 tbsp. olive oil
  • 4 sweet italian sausages (or 8 if sausages are small)
  • 1 large onion, thinly sliced
  • ½ cup homemade or low-salt chicken broth
  • 2 tbsp. balsamic vinegar
  • 20 seedless red grapes, halved
Instructions
  1. In a large skillet, heat 1 tbsp. of oil over medium-high heat. Add sausages and cook until they're browned all over, about 8 minutes. Transfer to a large plate (they won't be fuly cooked, it's ok, they will braise later).
  2. Add the remaining oil to the skillet and then your onions with ½ tsp. of salt. Cook the onions stirring occasionally until they turn light brown, about 7 minutes.
  3. Add the chicken broth and balsamic vinegar and scrape the skillet to deglaze. Reduce heat to low.
  4. Ad sausages and grapes, cover your skillet with the lid ajar and cook until the sausages are cooked through, about 25 minutes.
  5. Serve over mash potatoes.
