This Nann Bread Smoked Salmon Pizza is my perfect go-to recipe when I want something light, fast and easy! And it can be made in less than 15 minutes! This is a re-creation of a dish I had a few years ago at the Banff Spring Hotel, a spectacular hotel in the heart of the Banff National Park in Alberta Canada.  It was built in the 19th century as one of Canada’s grand railway hotels and the view of the Rocky Mountains from the terrace is just breathtaking. I had a lovely nann bread topped with smoked salmon and a nice creamy dill sauce to compliment my afternoon there. It was so delicious and yet so simple, I knew I would have to make it at home. It’s really the perfect lunch or light dinner when sided with a green salad.

The light dill sauce is a perfect accompaniment for the delicate smoked salmon, and the capers and pickled onions add a little kick. I’m not a huge fan of raw onions so I soak them in red wine vinegar, which mellows their flavor and removes that pungent aftertaste. You could use cold water instead of vinegar but I strongly suggest using vinegar for this recipe because it really adds a little je ne sais quoi to the dish.

Serves: 4
Ingredients
  • PICKLED ONIONS
  • 1 small red onion, thinly sliced
  • 2 tbsp. red wine vinegar
  • DILL SAUCE
  • ½ cup of sour cream (or plain Greek yoghurt)
  • 2 tbsp. fresh dill, chopped
  • 1 tbsp. fresh chives, chopped
  • 1 tbsp. capers, chopped
  • 1 tsp lemon juice
  • ½ tsp grated lemon peel
  • PIZZA
  • 4 nann breads
  • 8 oz smoked salmon
  • Garnish
  • Capers (to taste)
  • Dill, chopped (to taste)
  • Pickled Onions
  • Pepper
Instructions
  1. Preheat your oven to 400⁰F
  2. PICKLED ONIONS
  3. Combine the onions with the vinegar in a small bowl. Set aside. Let soak at least 15 minutes.
  4. DILL SAUCE
  5. In a medium bowl, mix all the sauce ingredients. Set aside.
  6. PIZZA
  7. Sprinkle your nann breads with a few drops of water.
  8. Put the nann breads in the oven for about 3 minutes. You want it soft and warm, you don't want it to crisp.
  9. Take your nann breads of the oven and spread 2 tbsp. of dill sauce over each bread.
  10. Cover each bread with smoked salmon.
  11. Garnish with capers, dill, your pickled onions and season with a touch of salt & pepper.
